Again, I struggled with topics for this one. You’d think the letter “M” would be easy — it’s always been my favorite letter because my name starts with it. I’ve always thought of “M” as my letter. Haha.
Well I thought I’d write about what? Mushrooms! Pretty random, but whatever. I never liked mushrooms growing up. The idea of eating them was gross. I guess I just thought of them all as poisonous. Then I got to college and there were mushrooms at the stir-fry stations in the dining hall, and mushrooms in the pasta from the pasta stations. Pretty soon I fell in love with mushrooms. I eat them regularly these days — as part of stir-fries, in spaghetti sauce, for breakfast with kale, with scrambled eggs, everything. Occasionally I make portobello “burgers”.
A few years ago I bought one of those Back to the Roots grow your own mushrooms kit. It took a while for the mushroom caps to appear, but once they did, they doubled in size every hour. Amazing how fast they grow. I almost didn’t want to eat them, but I did. They were delicious. Here’s some pictures (they’re from 2012) of my mushroom kit in varying states of growth:
